"Gongfu" 工夫 does not mean kung fu the martial art — it means something done with patience and mastery. Gongfu tea is the Chinese art of brewing: small pots, high leaf-to-water ratios, and many short infusions that open a tea leaf like chapters of a book — the first steep bright and floral, the third deep and mineral, the seventh quiet and sweet.
